S N I C K E R D O O D L E S

Snickerdoodles are my favorite cookie. Hands down. I hardly have a sweet tooth but I could legitimately eat an entire plate of these. My mom always baked them when I was growing up (because they are EASY) and now they are my go to for any sort of cookie party. I tried to investigate the history of the snickerdoodle (because I want all of us to expand our minds) but to little avail. They are possibly German in origin, with the original name being Schneckennudeln. It's also popular they were invented in New Enland during the early 1900s and were named 'snickerdoodles' only because it was a thing to make up cookies and give them chimerical names. Anyway, I made some last night. But instead of sticking to the tired and true cinnamon sugar coating, I rolled them in a "chai spice" mixture. They were unbelievable. We ate the whole plate. SERIOUSLY.

 
Snickerdoodles
 

·         ½ C butter
·         ¾ C granulated sugar
·         1 egg  OR 2T plain yogurt
·         1 ¼ C flour
·         ¼ tsp salt
·         ½ tsp baking soda
·         1 tsp cream of tartar
CinnamonSugar coating
·         1T granulated sugar
·         1T cinnamon
ChaiSpice coating
·         2T granulated sugar
·         1/8 tsp ground ginger
·         ½ tsp ground cardamom
·         1/8  tsp cinnamon
·         Pinch of cloves
Directions
1.       In a large mixing bowl, cream together butter and sugar
2.       Add egg, beat all ingredients together.
3.       Sift flour, salt, baking soda, and cream of tartar into a bowl
4.       Add half of the flour mixture to the butter, sugar and egg. Stir with a wooden spoon, slowly.
5.    When the mixture is well combinded, add in the rest. Your result will be a sticky yellow dough
6.       Preheat oven to 400°F
7.       Cover your mixing bowl and let the dough chill for an hour.
8.       Roll walnut sized dough balls
9.       Roll dough balls in chai spice or cinnamon sugar
10.      Place all the dough balls on a cookie sheet, with lots of room to expand
11.   Bake for 10 minutes, and check them. If they are golden brown around the edges, they'e done!
 
 The cookies will be very soft when you take them out of the oven. Don’t worry! They will harden up while they cool.
